Serving: Makes 4 servings

Ingredients
• 3/4 cup warm water (105° to 115°F)
• 1 package active dry yeast
• 2 tbsps. olive oil
• 3/4 tsp. salt
• 2 1/4 cups (about) bread flour
• 1/2 cup soy sauce
• 1/4 cup olive oil
• 2 tbsps. puchased prepared wasabi (from sushi counter)
• 2 tsps. minced peeled fresh ginger
• 1 1-inch-thick ahi tuna steak (14 to 16 oz.)
• Olive oil
• Chopped green onions

Direction
• Dough: Put 3/4 cup warm water in big bowl; mix yeast in. Stand for 10 minutes till yeast melts; mix salt and oil in. Add 2 cups flour; mix with rubber spatula till dough forms then knead till elastic and smooth in bowl for 6 minutes. If dough is very sticky, add extra flour by tablespoonfuls. Put dough in oiled bowl; turn it to coat. Use plastic wrap and towel to cover bowl; rise for 1 1/2 hours till doubled in volume in warm draft-free area. • Sauce: Whisk wasabi, oil and soy sauce till blended in medium bowl; whisk ginger in. Season sauce with pepper to taste. • Put rack in middle of oven; preheat it to 400°F. Put heavy baking sheet to heat on rack. Knead dough gently to deflate; divide to 4 even pieces. Form each to disk; put on lightly floured surface. Use towel to cover; rest for 15 minutes. Roll each piece out to 6-inch diameter round. Use towel to cover again the dough rounds; rest for 10 minutes. • Roll 2 dough rounds out to 8-inch diameter rounds, approximately 1/8-inch thick; generously brush wasabi sauce on each. • Lightly sprinkle flour on heated baking sheet in oven. Put dough rounds on sheet; bake crusts for 10 minutes till crisp on bottom and golden on top. If needed, use fork to pierce big bubbles; put on plate. Repeat using leftover 2 dough rounds. • Meanwhile, make topping; brush olive oil on tuna steak; sprinkle pepper and salt. Heavy big heavy nonstick skillet on high heat then add tuna; sear for 5 minutes per side till brown outside yet pink inside. • Put tuna on work surface; thinly slice. On each pizza crust, put 1/4 tuna; drizzle 1 tbsp. wasabi sauce on each and sprinkle chopped green onions. Serve passing leftover wasabi sauce separately.
