• 1/4 cup soy sauce
• 1/4 cup extra-virgin olive oil
• 2 tbsps. lemon juice
• 2 tsps. Asian (toasted) sesame oil
• 2 tsps. molasses
• 1 tsp. cayenne pepper, or more to taste
• 6 thin slices fresh ginger, minced
• 2 cloves garlic, minced
• 2 1-inch-thick tuna steaks, thawed

• In a bowl, combine sesame oil, soy sauce, olive oil, lemon juice, garlic, molasses, ginger and cayenne pepper. • In an airtight container or a big ziplock bag, put in the tuna steaks and add in the marinade mixture. Let the steaks marinate for 20 minutes at room temperature. • Heat a non-stick pan over medium heat. Put the marinated tuna steaks (without the marinade) into the hot pan and shake the pan a bit to prevent the steaks from sticking in the pan. Cook the steaks for about 1 1/2 minutes then flip it over on the other side. Let the other side of the tuna steak cook for 1-2 more minutes until you achieve the desired doneness. Check the temperature of the tuna using an instant-read thermometer inserted in the middle, it should be at 140°F (60°C).
