• 1 large potato, peeled and cubed
• 4 (3 oz.) cans tuna, drained
• 1 egg
• 1/4 cup chopped onion
• 1 tbsp. Dijon mustard
• 1 tbsp. dry breadcrumbs, or as needed
• 1 1/2 tsps. garlic powder
• 1 tsp. Italian seasoning
• 1/4 tsp. cayenne pepper
• salt and ground black pepper to taste
• 1 tbsp. olive oil

• In a small pot, put potato then pour in salted water to cover. Heat to a boil on high heat; decrease to medium low heat, allow to simmer 20 minutes with cover, until tender. Drain. Steam dry for 1 or 2 minutes then use a fork or potato masher to mash the potato in a big bowl. • Into the mashed potato, mix pepper, salt, cayenne pepper, Italian seasoning, garlic powder, bread crumbs, Dijon mustard, onion, egg, and tuna, until well mixed. Distribute tuna mixture into eight equal portions then form into patties. • In a skillet, heat olive oil on medium heat. Pan fry tuna patties for 3 minutes per side, until crisp and browned.
