• two 6-oz. cans solid white tuna packed in oil, drained well
• a 10 1/4-oz. package soft tofu, drained
• 3 scallions, minced
• 1 carrot, shredded fine
• 2 tbsps. minced fresh parsley leaves
• 2 tbsps. drained capers, chopped
• 3 tbsps. fresh lemon juice
• Accompaniment: crackers or assorted crudités

• Preparation: Use a fork to stir tuna in a bowl until finely flaked. Whisk tofu until smooth in separate bowl. Mix tofu and the rest of ingredients into tuna until combined and use pepper and salt to season. Serve dip with crudités or crackers.
